JANCIS ROBINSON: "Smoky almond wrapped in dried peach and apricot leather and lined with bay leaves. Silk and white pepper. A touch of capsicum, white-chicory-leaf bitterness. This has the apricot-dipped-in-sea-water heart of Rias Baixas but it also has the salad-crunch of celery and cucumber and borage. Hinting towards richness, but not there yet… Complex, changing moment by moment in the mouth like nacreous clouds in the sky. No hurry to drink it."
